Mango Salad Enselada
Ingredients:
    >2 medium ripe mangoes (manibalang)
   >1 medium size tomato
   >1 red onion
   >1 small ginger
   >2 tsp. shrimp paste (cooked)
   >lemon to garnish



Directions: > chop mangoes, tomato, onion, and ginger into small dice with same size.
                  > mix all the chopped ingredients together.
                  > add the cooked shrimp paste,  mix together then pour the mixture in a plate        of your choice.
                  > slice lemon based on your artistic taste for garnishing then put some sliced mangoes on side.

Spicy Sausage
Ingredients:
    > 1/2 kg. chicken sausages 
   > 2 medium size red onion (sliced)
   > 1 medium size white onion (sliced)
   > 5 pcs. small green chili (chopped)
   > 2 tbs. ketchup
   > 3 tbs. oyster sauce
   > 3 tbs. cooking oil
   > pepper to taste

Directions:     >chop the sausages according to your desire size
                     > heat the cooking oil in a frying pan,
                     >  saute sliced red onion in a medium heat pan for 20 sec.
                     > then add the sausages until the sausages are well brown, then add the chopped green chili.
                     > add the ketchup and pepper to taste and let it simmer for 1 to 2 minutes.
                     > add oyster sauce then regulate the stove in a low heat (to prevent burning the oyster sauce) toss or mix it for several times for 1 minute.
                     > put in a plate of your choice then garnish with chopped white onion, then serve while it's hot.

Lechon Kawali
Ingredients:
   > 1/2 kg. pork belly (sliced into 2 or 3 portions)
   > garlic (chopped)
   > 1 red onions (chopped)
   > 1/2 cup salt
   > 1 tsp. ground pepper
   > 1 tsp. powder seasoning
   > 1 ltr. water
                                                                                         > 500 ml. cooking oil
                                                                                                                                        for the sauce: mix 1/2 cup vinegar, 1/4 cup soy sauce
                                                                                                                                                                                chopped red onion, a slice of lemon, 
                                                                                                                                                                                chopped green chili and pepper to taste

Directions:   > boil 1 ltr. of water in a boiling pan, add salt, pepper, chopped garlic and       onions, and powder seasoning then put the pork belly portions.
                     > let it boil for 80 minutes, strain and let it cold for 20 minutes then stab the pork belly several times from the skin using fork orstick. Then keep it in freezer/fridge for bout 2-4 hours.
                      > pour the cooking oil in a deep frying pan with medium heat, then deep fry the frozen pork belly until perfectly golden brown, turn from side to side. Make sure that the oil is totally hot before frying the pork belly.
                       > Chopped into bite sizes then  serve with sauce.

Chicken Adobo

Ingredients:
      > 1 kg. chicken (part of your choice)
    > 1 clove garlic (finely chopped)
    > 1 tbs. whole black pepper
    > 1/2 tsp. ground black pepper
    > 3 laurel leaves
    > 1/3 cup vinegar
    > 1/2 cup soy sauce
    > cooking oil

Directions:  > Put chicken in a wok or pan, then add chopped garlic, ground pepper, whole pepper, vinegar and soy sauce (don't mix).
                    > Then place in low heat for about 5 minute then start mixing and let it simmer for about 10 to 15 minutes.
                     > Remove the remaining sauce, do not discharge just keep it aside.
                     > Add cooking oil to the chicken on a medium heat, toss it accordingly for 3 minutes then add laurel leaves.
                     > Put back the removed sauce and let it simmer in a medium heat until cook, then serve with steamed rice.

BBQ Liempo
Ingredients:
   > 1 kg. pork liempo
  > 1/4 cup oyster sauce
  > 1/3 cup soy sauce
  > 2 lemons
  > 1/4 cup brown sugar
  > 1/4 cup ketchup
  > 1 tsp. ground black pepper
  > chili powder or chili sauce

Directions:  > for the marinade, mix soy sauce, oyster sauce, 2 lemon squeeze, sugar, ground pepper, chili powder and ketchup all together in a bowl.
                   > slice pork liempo for about 5 to 6 inches with 1 cm thickness. Pour the marinade mixture, mix it well and keep in a room temperature storage area for about 2 hours (if possible overnight in a fridge will be better).
                    > then grill it using a grill pan or better yet use outdoor charcoal grill. Then serve it with mango salad enselada and ice cold beer.

Spicy Chicken Wings
Ingredients:
     > 1kg. chicken wings
   > 3 medium size red onion (chopped)
   > 5 to 10 pcs. small green chili (finely chopped)
   > 1/3 cup  soy sauce
   > 1 tbs. oyster sauce
   > 1/4 cup white sugar
   > 1/3 cup cooking oil
   > ground black pepper to taste
   > onion chives (chopped)

Directions:   >put cooking oil in wok under medium heat, saute chopped onion then add chili (depending on your taste). 
                    > then add the chicken wings and let it simmer for about 15 minutes, then add soy sauce and sugar, toss it accordingly until the soy sauce sticks to the chicken wings and the sauce  become sticky.
                    > add the oyster sauce, stir. You can still add sugar, chili, and soy sauce depending on your taste, then let sauce remains sticks in the chicken wings then sprinkle chopped onion chives to garnish. Ready to serve.

Stir Fry Mix Vegetables with Oyster Sauce
Ingredients: 
    > 1 medium size carrot sliced
   > 100 gm young corn cut into half
   > 100 gm sliced mushroom
   > 200 gm quail egg
   > 6 to 7 tbs oyster sauce
   > 200 gm tofu (diced and fried)
   > spinach (chopped)
   > chili powder and ground pepper to taste
   > 1/2 clove garlic (chopped)
                                                                                     > 1/4 cup salted butter

Directions:  > heat the butter in a wok in low to medium heat, then saute the garlic then add fried tofu before the garlic turns brown.
                   > add carrot and let it cook until carrot is tender, then add young corn, mushroom, and quail egg together, keep on tossing in medium heat.
                   > add oyster sauce then stir, add a pinch of chili powder and ground pepper according to your taste. Then add spinach and continue tossing it for about 5 minutes in high heat, then serve with steamed rice.
